Obviously I’ve been craving chocolate, and this mousse was perfectly light and rich the greatest end to a craving. This is a sneak peak into my next blog post and the beauty of seasonal simple cooking!!

Flourless Chocolate Cake 🍫💗
A cake that has become a personal staple for those gloomy days that need an indulgent moment to look forward to. A velvety rich treat!

Cake
1/2 c butter
1 c semi sweet chocolate chip
3/4 c sugar
1/8 t salt
1 t vanilla
3 eggs
1/2 c coco powder
1 T espresso

Glaze
3 T butter
2/3 c semi sweet chocolate chip

- Set oven to 375
- Melt butter and chocolate chips for the cake
- Once cooled mix in sugar, salt, vanilla, eggs, coco powder, espresso
- Bake for 25-30 mins
- LET COOL FULLY
- Melt butter and chocolate chips for glaze
- Pour on top of cake
- Serve when icing become slightly hard

BIG DAY!!! We tried OYSTERS 🦪
I put lemon and cocktail sauce on mine and it was perfectly briny and citrusy. Paired with white wine this snack was perfectly bright!! We had crunchy warm papas bravas which was paired with a Spanish aïoli. And the FINALE…Dirty Chai Tiramisu!!! These velvety flavors chai cream, homemade lady fingers infused with coffee liqueur, and a dark chocolate pastry crème. Topping it off, literally, shavings of dark chocolate. @aperi_stl I will be back again 🫶

Brown sugar is a great way to elevate your favorite martini with no extra work!☕️🫶✨

After graduating from college, my high school friends started a Cookbook Club as a way to prioritize hanging out at least once a month! Since I love cooking new things with the ones I love, I recommend it to EVERYONE!!

This month I was in charge of drinks🍸
So, obviously I chose my favorite (and a classic!) Espresso Martini!! But I put a tiny pivot on it (I can’t even call it a twist cause it’s no extra steps), instead of using simple syrup which is made with white sugar, make it with brown sugar.

✨Brown Sugar Syrup:
1/3 cup brown sugar
1/3 cup water

Simmer on medium heat for 8 min
Transfer to mason jar
Put in the fridge

✨Espresso Martini Equation:
Equal parts…
Vodka
Kahlua
Espresso Shot
Brown Sugar Syrup
(1 oz of each)

Mix with ice! For a LONGGGGG timeeeee. And then just enjoy 😊 I wish you all health, wealth, and happiness as the Italian three bean fortune goes!

For my dad’s birthday, I made a family favorite: BANANA PUDDING, with perfect layers and homemade pudding.🍌 Warm banana pudding on a -1-degree evening was the perfect way to celebrate with love, laughter, and layers of creamy goodness!

Start with the vanilla pudding! 🍨 I know it’s tempting to buy pre-made pudding, but I REALLY recommend making it from scratch. It adds such a layer of love to this dish, and in my opinion, it makes it 100x better. 🤭

Pudding:
• 1/3 cup flour
• Dash of salt
• 2 1/2 cups milk
• One 14 oz can of sweetened condensed milk
• 2 egg yolks
• 2 teaspoons vanilla

First, add the flour and salt to a saucepan. Set it over medium heat and slowly whisk in the milk, sweetened condensed milk, and egg yolks (save the egg whites for later). Stir for about 8 minutes until thickened, then add the vanilla. Remove from heat and set aside.

Layers:
I used about 8 bananas and a whole box of Nilla Wafers.

Pro tip: I cut the bananas lengthwise to save time and space—trust me, setting down little banana coins gets boring fast! Here’s how to layer it: bananas, half of the pudding mixture, a layer of wafers, and repeat.

Meringue:
• 4 egg whites
• 2/3 cup sugar

For best results, use a chilled bowl! Beat the egg whites on high speed until frothy, then gradually add the sugar. Keep beating until the sugar dissolves and stiff peaks form. Spread the meringue over the pudding (I used half for piping on the sides, but you can use all of it on top). Bake at 325°F for 25 minutes, then let it cool for 30 minutes.

The easiest (and most impressive) meal I’ve made yet! 🙌✨ Here’s the magic formula:

Marinate:
2 T olive oil
2 T balsamic vinegar
2 T red wine
Salt and pepper to taste

8 sweet Italian sausages
1 chopped white onion
1/2 half bag of seedless red grapes
Rosemary

1. Set the oven to 425
2. Coat a sheet pan in olive oil
3. Lay our sausages, onion, grapes, and rosemary
4. Drizzle marinate on top
5. Put in oven for 45 min (no need to flip sausages)

Then EAT and marvel at how something so simple can look and taste this good. Paired with a polenta side is just divine 💜 Trust me you’ll be back for seconds!! Enjoy 😊

New American fusion spot right next to Lake Michigan! This lunch was a delicate blend of smoky spices and bright herbs like mint and dill.

It all started with the Kennebec Fries, loaded with Cajun seasoning and paired with a creamy Cacio e Pepe mayo that added the perfect balance! The rest of the meal was meant to be shared family-style. We shared Harissa Wings, Maple Tandoori Chicken, Thai Caramelized Short Ribs, and Garganelli Fennel Pasta—filling and refreshing!

Their newest location in Ballpark Village is so welcoming and glows with such elegance. All of our dinner choices highlighted Katie’s ability to pair two different flavor profiles (Savory and Sweet) into something beautiful.

Yesterday was the start of a Christmas Journey to the STL Christmas pop-up bars!! We started with the “Moose Lounge” on the Angad Hotel’s top floor. This intimate cocktail bar is National Lampoon Christmas Vacation theme!! And it shows through their decor and, of course the main event, the drinks!! (Names and ratings below). We also munched on their spinach dip, and if you love garlic, like me, this warmth giving cheese dip was delightful!! The Angad hotel has a beautiful quirky design throughout the whole hotel and a stunning view of the arch. A beautiful,chill get together spot!

(Incredible free plant exhibit, that is a warm stop on a cold Chicago day)

(AMAZING tacos and a honey vibe, super recommend)

(Lovely Heritage explanation and amazing lively colors, also free)

09/27- I tried the Sea Salt bagel and Black Cherry cream cheese for a tart sweet and salty blend…AMAZING! I hope to one day eat this finger sandwich on a fancy porch in a big floppy hat to satisfy the feeling these flavors bring!! My fiancé got the Salmon Roe half size topped with Salmon eggs and pickled shallots, dressed with aromatic dill!

Such and Such Farms. A beautiful concept on humanity!! A family opening up their home on weekends, inviting chefs to create 5 course meals with produce from the farm, to share with people from all different parts of life. As you walk up the hill, at the top lies a metal palace surrounded by goat guards, peacock princesses, and fireplace pillars. @suchandsuchfarm
